Easter Bunny Bread Rolls

 

These adorable Easter bunny bread rolls are a perfect choice for a festive table. The soft yeast dough, enriched with cream cheese, chives, and ham, makes for a delicious and satisfying snack. With a bit of creativity in shaping, they will delight both children and adults and brighten up any Easter gathering

Ingredients:

  • 1 kg (2.2 lbs) flour
  • 2 tsp salt
  • 2 tbsp olive oil
  • 1 egg
  • approx. 500–600 ml (2–2.5 cups) lukewarm water, as needed
  • 1 tbsp sugar
  • 1 cube fresh yeast
  • cream cheese (spreadable cheese)
  • fresh chives, chopped
  • 200g cooked ham Cobus

Preparation:

  1. In lukewarm water, add the sugar and yeast, and let it activate for about 10 minutes.
  2. In a large bowl, mix the flour and salt. Add the egg, olive oil, and the activated yeast mixture.
  3. Gradually pour in the lukewarm water and knead into a soft, smooth dough. Cover the dough and let it rise for about 1 hour, until it doubles in size.
  4. Roll out about 3/4 of the dough into a rectangle. Spread with cream cheese, sprinkle with chopped fresh chives, and layer slices of cooked ham on top. Roll into a log and cut into rounds.
  5. For shaping the bunnies, take the remaining dough and roll it out. Use a cookie cutter to cut out circles. Cut each circle in half to form the ears. Press two “ears” gently together at the bottom, then attach them to the bottom of the round (the bunny’s body) that contains the filling.
  6. Place the bunnies on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C (350 °F) for about 30 minutes, until golden brown.
